#1 Must Try Kingston Club Cocktail

A thoroughly impressive Tiki Style cocktail with beautiful aromatics and herbaceous notes. Created by Jeffrey Morgenthaler, manager of Clyde Common in Portland, Oregon. This is a MUST try!!

INGREDIENTS
- 45mL Drambuie Scotch Liqueur
- 5mL Fernet Branca
- 45mL Fresh Pineapple Juice
- 22.5mL Fresh Lime Juice
- 30mL Soda Water

HOW TO
1. Add all the ingredients except the soda water to your cocktail shaker & fill with ice
2. Shake & strain over fresh ice into a high ball glass
3. Top with a dash of soda & stir
4. Garnish with a twist of orange peel

#2 Tommy’s Margarita

How to make a Tommy's Margarita?

INGREDIENTS
- 60mL El Jimador tequila
- 30mL Fresh Lime Juice
- 10mL Agave Syrup (1:1)

HOW TO
1. Add all the ingredients to your cocktail shaker
2. Shake and strain over fresh ice into a rocks glass
3. Garnish with a wedge or wheel of lime

#3 1st Class Pan Am Cocktail Recipe

Creation of Bacardi Legacy 2015 winner, Barney Toy. Inspired by the luxury and style on board Pan American Airway’s 1st Class flight that flew Florida to Havana during Prohibition.

INGREDIENTS
- 45mL Bacardi Carta Blanca
- 15mL Aperol Aperitivo
- 30mL Fresh Lemon Juice
- 15mL Orgeat
- 1/2 Egg White
- 3 drops of Peychaud’s Bitters

HOW TO
1. Dry shake the egg white
2. Add the remaining ingredients to your cocktail shaker
3. Shake & double strain into a chilled Nick & Nora glass
4. Finish with 3 drops of Peychaud’s Bitters

#4 Amaretto Sour Cocktail Recipe – The BEST!!

INGREDIENTS
- 45mL Amaretto
- 15mL Bourbon Whiskey
- 30mL Fresh Lemon Juice
- 10mL Sugar Syrup (1:1)
- 1/2 an Egg White

HOW TO
1. Separate the egg white from the yolk and add half to your shaker
2. Add a single cube of ice and shake to emulsify the egg (this is called a 'dry shake')
3. Add the remaining ingredients and fill the cocktail shaker with ice
4. Shake & strain over fresh ice into a double old fashioned glass
5. Garnish with a twist of orange and bitters

INGREDIENTS
- 50mL Bourbon Whiskey
- 22.5mL Fresh Lemon Juice
- 22.5mL Sugar Syrup (1:1)
- 4-6 Mint Leaves

HOW TO
1. Add the ingredients to your cocktail shaker and fill with ice
2. Shake & double strain over fresh ice into a double old-fashioned glass
3. Garnish with a sprig of mint

#6 New York Sour Cocktail Recipe

How to make a New York Sour?

A pre-prohibition cocktail that has made a comeback over recent years. The addition of a splash of red wine differentiates it from a Whiskey Sour and gives it an interesting twist worth trying.

INGREDIENTS
- 60mL Bourbon Whiskey (or Rye if preferred)
- 30mL Fresh Lemon Juice
- 22.5mL Sugar Syrup (1:1)
- 1 x Egg White
- 30mL Red Wine

HOW TO
1. Dry shake the egg white
2. Fill your shaker with ice and add the remaining ingredients except for the red wine
3. Shake & strain over fresh ice into a Double Old Fashioned glass
4. Float the red wine on top

#7 The Tasty Espresso Martini alternative: The Dominicana Cocktail

If you love all things coffee (Attention Espresso Martini fans!) then you’ll be a crazed fan of the Dominicana. The gently layered cream and a touch of sugar help to cut through the strong drink, making for a very tasty sipper.

INGREDIENTS
- 45mL Aged Rum
- 45mL Coffee Liqueur (e.g. Kahlua)
- 7.5mL Sugar Syrup (1:1)

HOW TO
1. Add the ingredients to a cocktail shaker
2. Shake & double strain into a chilled cocktail glass
3. Float cream on top

- 20mL Sugar Syrup (1:1)

#9 Mai Tai Trader Vic Style

The original Trader Vic Mai Tai calls for Amber rum and a dark Jamaican rum balanced with fresh lime and orgeat. Heavy on the rum and full of flavor.

INGREDIENTS
- 30mL Dark Jamaican Rum
- 30mL Amber Rum
- 15mL Triple Sec
- 22.5mL Fresh Lime Juice
- 7.5mL Orgeat
- 10mL Sugar Syrup (1:1)

2. Shake & double strain over crushed ice into a double old-fashioned
3. Garnish with a mint sprig

The Pina Colada is one of the most well known tropical cocktails. Blended vs. Shaken!

INGREDIENTS
- 60mL White Rum
- 90mL Fresh Pineapple Juice
- 30mL Coconut Cream
- Fresh Pineapple

HOW TO MAKE A BLENDED PINA COLADA
1. Add all the ingredients to your blender
2. Blend until smooth
3. Pour into your cocktail glass
4. Garnish with a pineapple wedge and leaf

1. Add all the ingredients to your cocktail shaker (if using fresh pineapple, muddle first)
2. Shake & strain over crushed ice into a cocktail glass

How to make a Gin Bramble?

Essentially a gin sour with a splash of blackberry liqueur. A tasty number that balances the sourness with sweet fruit flavors.

INGREDIENTS
- 45mL Gin
- 22.5mL Fresh Lemon Juice
- 22.5mL Sugar Syrup (1:1)
- 22.5mL Creme de Mure (or substitute with Chambord)

HOW TO
1. Add all the ingredients except the creme de mure to your cocktail shaker
2. Shake & strain over fresh ice into a double old-fashioned glass
3. Garnish with skewered blackberries or a twist of lemon

#12 Caipiroska Cocktail Recipe

The Caipiroska is an easy drink to create. Nail the balance of sweet and sour flavors, load your glass with crushed ice and you’ll keep coming back for more. Get muddling!

INGREDIENTS
- 60mL Vodka
- 1/2 Lime
- 2 x heaped teaspoons of brown sugar

HOW TO
1. Cut lime into eighths and add half the lime to an Old Fashioned glass
2. Add other ingredients and muddle
3. Fill the glass with crushed ice and stir
4. Garnish with a lime wheel or wedge

#13 Jeffrey Morgenthaler’s Revolver Cocktail

How to make a Revolver?

The sweet, caramel notes of the bourbon whiskey play well with the coffee liqueur and bitter orange flavors. With adequate dilution and balance of flavors, this cocktail makes for a perfect nightcap.

INGREDIENTS
- 60mL Makers Mark Bourbon Whiskey
- 15mL Mr. Black Cold Drip Coffee Liqueur
- 2 x dashes of Regan's No. 6 Bitters

HOW TO
1. Fill your mixing glass with ice
2. Add all 3 ingredients
3. Stir for 25 seconds or until sufficiently diluted
4. Strain into a Nick & Nora glass
5. Garnish with a flamed orange zest

#14 White Lady Cocktail

How to make a White Lady?

Ounce Gin works remarkably well in a White Lady. The orange & vanilla notes from the gin compliment the orange liqueur and citrus within the cocktail. Chin Chin!

INGREDIENTS
- 45mL Gin (we used Ounce Gin)
- 30mL Cointreau
- 22.5mL Fresh Lemon Juice
- 10mL Sugar Syrup (1:1)
- 1 x Egg White

HOW TO
1. Dry shake the egg white
2. Add remaining ingredients to the cocktail shaker
3. Shake & double strain into a chilled coupe glass

#15 Cocktails French 75 Tanqueray Gin

How to make a French 75 Cocktail?

The French 75 cocktail is a slight variation on the classic Tom Collins. It was originally made using cognac but is more commonly made with gin nowadays.

INGREDIENTS
- 30mL Tanqueray Gin
- 30mL Fresh Lemon Juice
- 22.5mL Sugar Syrup (1:1)
- 90-100mL Sparkling Wine

HOW TO
1. Add all the ingredients except the sparkling wine to your cocktail shaker
2. Shake then add the sparkling wine and stir
3. Pour over fresh ice into a Collins glass
4. Garnish with a twist of lemon

#16 Cocktail Gin Basil Smash

Recently created in 2008 by German bartender, Jörg Meyer. His original recipe calls for Hendrik's Gin but we've kept it local with this savory and boozy smash!

INGREDIENTS
- 60mL Gin (we used Antipodes)
- 22.5mL Fresh Lemon Juice
- 22.5mL Sugar Syrup (1:1)
- Basil

HOW TO
1. Muddle the basil in the cocktail shaker
2. Add the remaining ingredients
3. Shake & strain over fresh ice into a Double Old Fashioned glass
4. Garnish with a sprig of basil

#17 Paper Plane Cocktail Recipe

How to make a Paper Plane?

The ideal aperitif and super easy to make with 4 ingredients in equal parts. Creation of NY bartender Sam Ross (also responsible for the modern classic smokey, honey, whiskey cocktail, the Penicillin).

INGREDIENTS
- 22.5mL Bourbon Whiskey
- 22.5mL Aperol
- 22.5mL Amaro Nonino Quintessentia
- 22.5mL Fresh Lemon Juice

HOW TO
1. Add all the ingredients to your cocktail shaker
2. Shake & double strain into a chilled coupe glass
3. Garnish with a twist of lemon (or a Paper Plane!)

#18 The Quintessential Manhattan Cocktail

How to make a Manhattan?

The quintessential classic cocktail comprising of only 3 ingredients, rye whiskey, sweet vermouth (also known as Italian vermouth) and Angostura bitters. Experiment with different vermouth’s to make your perfect Manhattan.

INGREDIENTS
- 60mL Rye Whiskey
- 30mL Sweet Vermouth (often referred as Italian vermouth)
- 3 dashes of Angostura Bitters

HOW TO
1. Add all the ingredients to your mixing glass
2. Stir until you reach adequate dilution (around 25 seconds)
3. Garnish with a maraschino cherry or a twist of orange

#19 Barrel-Aged Maple Old Fashioned

Barrel aging adds toasted oak and vanilla notes to a cocktail whilst mellowing the alcohol. The ideal aging is 4-6 weeks depending on your barrel size – the smaller the barrel, the more surface area and faster the process takes place.

INGREDIENTS
- 4.2L Makers Mark Bourbon Whiskey
- 105mL Angostura Bitters
- 500mL Maple Syrup (diluted)

HOW TO
1. Add all the ingredients to a 5 litre barrel
2. Age for approximately 4-6 weeks before bottling – taste test during this period regularly
3. To serve, stir with ice before straining over fresh ice into your favouite old fashioned glass
4. Garnish with a twist of orange

#20 Dominicana Cocktail: Espresso Martini Alternative

- 22.5mL Fresh Lime Juice
- 2 dashes of Angostura Bitters

#22 TIKI WEEK: Hurricane Cocktail Recipe

First made popular in a New Orleans bar, Pat O'Brien's, back in the 1940s. The drink was named after the glasses that the first drinks were served in (still known as the hurricane glass).

INGREDIENTS
- 60mL Jamaican Rum
- 60mL White Rum
- 30mL Fresh Orange Juice
- 30mL Fresh Lime Juice
- 15mL Sugar Syrup (1:1)
- 15mL Grenadine
- Passionfruit Syrup

HOW TO
1. Add all the ingredients to your cocktail shaker
2. Shake & strain over ice into a hurricane glass
3.Garnish with a slice of orange and a cherry
